Instructions
- Step 1: Preheat oven to 400°F (200°C). Lightly grease a baking sheet.
- Step 2: Cut each chicken breast horizontally to create two thinner cutlets. Season the chicken with salt, pepper, and Italian herbs.
- Step 3: Roll out each puff pastry sheet slightly and cut each sheet into two squares. Place one chicken cutlet in the center of each square.
- Step 4: In a small bowl, combine the cream cheese, Parmesan cheese, heavy cream, and minced garlic. Spoon the cream cheese mixture evenly over the chicken cutlets.
- Step 5: Fold the puff pastry over the chicken and cream cheese mixture to create a "pillow." Crimp the edges with a fork to seal. Brush the tops of the pillows with the beaten egg.
- Step 6: Place the chicken pillows on the prepared baking sheet and bake for 20-25 minutes, or until the puff pastry is golden brown and the chicken is cooked through. Let cool slightly before serving.
