Instructions
- Step 1: In a shallow dish, combine the cooled coffee and Amaretto liqueur. Dip each ladyfinger briefly into the coffee mixture, ensuring they are moistened but not soggy.
- Step 2: In a large bowl, beat the mascarpone cheese and granulated sugar together until smooth and creamy. In a separate bowl, beat the egg whites until stiff peaks form. In a third bowl, beat the egg yolks with the vanilla extract until light and pale. Gently fold the egg yolk mixture into the mascarpone mixture, then carefully fold in the whipped egg whites until just combined. Be gentle to avoid deflating the egg whites.
- Step 3: In a trifle bowl or individual serving glasses, arrange a layer of the coffee-soaked ladyfingers. Spread half of the mascarpone mixture evenly over the ladyfingers. Top with half of the drained cherry pie filling.
- Step 4: Repeat layers with remaining ladyfingers, mascarpone mixture, and cherry filling. If desired, drizzle a small amount of reserved cherry juice over the top layer.
- Step 5: Cover the tiramisu and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the dessert to set.
- Step 6: Before serving, dust the top generously with unsweetened cocoa powder.
