Ingredients
Scale
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 1/2 cup grated cheese (cheddar or your choice)
- 1/4 cup chopped fresh chives
- 2 tablespoons butter (for cooking)
Instructions
- Step 1: In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Mix well to ensure the dry ingredients are evenly distributed.
- Step 2: In another bowl, whisk together the milk and egg until well combined. Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
- Step 3: Fold in the grated cheese and chopped chives into the batter until evenly distributed.
- Step 4: Heat a non-stick skillet or frying pan over medium heat and melt a tablespoon of butter. Once the butter is sizzling, pour about 1/4 cup of batter for each pancake onto the skillet.
- Step 5: Cook for about 2-3 minutes on one side, or until bubbles start to form on the surface. Flip the pancakes and cook for an additional 2-3 minutes until golden brown and cooked through. Repeat with remaining batter, adding more butter as needed.
- Step 6: Serve warm with your choice of toppings such as sour cream, additional chives, or a side salad. Enjoy!
Notes
- For optimal storage, keep leftover pancakes in an airtight container in the refrigerator for up to three days, or freeze them for longer-lasting enjoyment. When reheating, simply pop them in a toaster or on a skillet over low heat for a few minutes to restore their fluffy texture and warmth. These cheese and chive pancakes pair beautifully with a dollop of sour cream and extra chives, or you can enjoy them alongside a crisp side salad for a delightful meal. To enhance the flavor, consider adding spices like black pepper or garlic powder to the batter, which will elevate your pancakes even further!
