Ingredients
- Ground beef: 1 pound
- Onion, chopped: 1 medium
- Green bell pepper, chopped: 1 medium
- Diced tomatoes, canned: 1 (14.5 ounce) can, undrained
- Corn, canned or frozen: 1 (15 ounce) can, drained
- Chili powder: 2 tablespoons
- Shredded cheddar cheese: 2 cups
- Tortilla chips, crushed: 6 cups
Instructions
- Step 1: Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- Step 2: In a large skillet, brown the ground beef over medium-high heat. Drain off any excess grease.
- Step 3: Add the chopped onion and green bell pepper to the skillet with the ground beef. Cook until the vegetables are softened, about 5-7 minutes.
- Step 4: Stir in the diced tomatoes, corn, and chili powder. Bring to a simmer and cook for 5 minutes, stirring occasionally.
- Step 5: Spread half of the crushed tortilla chips in the bottom of the prepared baking dish. Pour the ground beef mixture over the chips.
- Step 6: Top with the remaining tortilla chips and then sprinkle evenly with the shredded cheddar cheese. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
