Delicious cattle drive casserole dish recipe with detailed instructions and nutritional information.

  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

  • Ground beef: 1 pound
  • Onion, chopped: 1 medium
  • Green bell pepper, chopped: 1 medium
  • Diced tomatoes, canned: 1 (14.5 ounce) can, undrained
  • Corn, canned or frozen: 1 (15 ounce) can, drained
  • Chili powder: 2 tablespoons
  • Shredded cheddar cheese: 2 cups
  • Tortilla chips, crushed: 6 cups

Instructions

  1. Step 1: Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Step 2: In a large skillet, brown the ground beef over medium-high heat. Drain off any excess grease.
  3. Step 3: Add the chopped onion and green bell pepper to the skillet with the ground beef. Cook until the vegetables are softened, about 5-7 minutes.
  4. Step 4: Stir in the diced tomatoes, corn, and chili powder. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  5. Step 5: Spread half of the crushed tortilla chips in the bottom of the prepared baking dish. Pour the ground beef mixture over the chips.
  6. Step 6: Top with the remaining tortilla chips and then sprinkle evenly with the shredded cheddar cheese. Bake for 20-25 minutes, or until the cheese is melted and bubbly.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For best results, reheat individual portions in the microwave or oven until warmed through, being careful not to burn the chips.
  • Serve with a dollop of sour cream and a sprinkle of fresh cilantro for added flavor and a pop of color.
  • Don't be afraid to experiment with different types of cheese, like Monterey Jack or pepper jack, to customize the flavor to your liking.
