Brighten your plate with this vibrant Carrot Apple Salad! Crisp carrots meet sweet apples, tossed in a zesty lemon-honey dressing. A refreshing, easy side.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 2 cups shredded carrots
  • 2 medium apples, cored and diced
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon honey or maple syrup
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Step 1: Wash and peel the carrots, then shred them using a grater or food processor. Place the shredded carrots into a large mixing bowl.
  2. Step 2: Wash, core, and dice the apples into small, bite-sized pieces. Add the diced apples to the bowl with the carrots. If not using immediately, toss the apples with a small amount of the lemon juice to prevent browning.
  3. Step 3: In a small separate bowl, whisk together the remaining lemon juice, extra virgin olive oil, honey (or maple syrup), salt, and black pepper until well combined to form the dressing.
  4. Step 4: Pour the prepared dressing over the carrots and apples in the large mixing bowl. If using, add the chopped walnuts at this stage.
  5. Step 5: Gently toss all the ingredients together until the carrots, apples, and walnuts (if used) are evenly coated with the dressing.
  6. Step 6: Serve the Carrot Apple Salad immediately, or cover and chill in the refrigerator for at least 15-20 minutes before serving for enhanced flavors.

Notes

  • Keep your salad fresh by storing any leftovers in an airtight container in the refrigerator for up to two days, though it truly shines brightest when enjoyed the day it's prepared.
  • As a delightfully fresh, chilled dish, this salad isn't designed for reheating; simply give any remaining portions a good stir and serve them cold to refresh the flavors.
  • Beyond a perfect side for grilled chicken or turkey, try serving this salad over a bed of mixed greens as a light lunch, or even as a unique topping for oatmeal for a sweet and crunchy breakfast twist.
  • Unlock an extra layer of deliciousness by toasting your walnuts in a dry skillet for a few minutes until fragrant before adding them; this simple step deepens their nutty flavor and enhances the salad's texture.
