Instructions
- Step 1: Wash and peel the carrots, then shred them using a grater or food processor. Place the shredded carrots into a large mixing bowl.
- Step 2: Wash, core, and dice the apples into small, bite-sized pieces. Add the diced apples to the bowl with the carrots. If not using immediately, toss the apples with a small amount of the lemon juice to prevent browning.
- Step 3: In a small separate bowl, whisk together the remaining lemon juice, extra virgin olive oil, honey (or maple syrup), salt, and black pepper until well combined to form the dressing.
- Step 4: Pour the prepared dressing over the carrots and apples in the large mixing bowl. If using, add the chopped walnuts at this stage.
- Step 5: Gently toss all the ingredients together until the carrots, apples, and walnuts (if used) are evenly coated with the dressing.
- Step 6: Serve the Carrot Apple Salad immediately, or cover and chill in the refrigerator for at least 15-20 minutes before serving for enhanced flavors.
