Ingredients
- Chicken breasts: 2 (6-8 ounces each)
- Asparagus: 1 pound, trimmed
- Caesar salad dressing: 1/2 cup, divided
- Grated Parmesan cheese: 1/4 cup, plus more for garnish
- Garlic: 2 cloves, minced
- Lemon juice: 1 tablespoon
- Olive oil: 2 tablespoons
- Black pepper: 1/4 teaspoon
Instructions
- Step 1: Preheat oven to 400°F (200°C). In a bowl, toss asparagus with 1 tablespoon of olive oil, salt, and pepper. Spread asparagus on a baking sheet in a single layer.
- Step 2: In a separate bowl, combine 1/4 cup Caesar dressing, minced garlic, lemon juice, Parmesan cheese, and black pepper.
- Step 3: Place chicken breasts on a separate baking sheet lined with parchment paper. Spread the Caesar dressing mixture evenly over the chicken breasts.
- Step 4: Bake the chicken and asparagus in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the asparagus is tender-crisp. The internal temperature of the chicken should reach 165°F (74°C).
- Step 5: Drizzle the remaining 1/4 cup of Caesar dressing over the cooked asparagus.
- Step 6: Garnish the chicken and asparagus with extra Parmesan cheese, if desired, and serve immediately.
