Ingredients
Scale
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup butterscotch chips
Instructions
- Step 1: Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- Step 2: In a large bowl, cream together the softened butter and brown sugar until light and fluffy. Beat in the egg and vanilla extract.
- Step 3: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Step 4: Stir in the butterscotch chips.
- Step 5: Spread the batter evenly into the prepared baking pan.
- Step 6: Bake for 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out with a few moist crumbs. Let cool completely in the pan before cutting into squares.
Notes
- To keep your butterscotch squares chewy, store them in an airtight container at room temperature.
- For a warm, gooey treat, microwave a square for about 10-15 seconds.
- Serve these squares with a scoop of vanilla ice cream and a drizzle of caramel sauce for an extra special dessert.
- For the best texture, avoid overmixing the batter after adding the flour to ensure a tender crumb.
