- Cottage cheese 1 cup (4% milkfat recommended)

- Cream of tartar 1/4 teaspoon
- Salt 1/4 teaspoon
- Garlic powder 1/4 teaspoon (optional)
- Italian seasoning 1/2 teaspoon (optional)
- Everything bagel seasoning 1 tablespoon (optional, for topping)
Instructions
- Step 1: Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
- Step 2: Separate the eggs, placing the whites in a clean, grease-free bowl and the yolks in a separate bowl.
- Step 3: In the bowl with the egg yolks, add the cottage cheese, salt, garlic powder (if using), and Italian seasoning (if using). Mix well until smooth using an immersion blender, regular blender or food processor.
- Step 4: In the bowl with the egg whites, add the cream of tartar. Beat with an electric mixer until stiff peaks form.
- Step 5: Gently fold the egg whites into the cottage cheese mixture, being careful not to deflate the whites. Fold until just combined.
- Step 6: Drop the mixture onto the prepared baking sheet in 4-6 equal-sized mounds. Sprinkle with everything bagel seasoning (if using). Bake for 30-40 minutes, or until golden brown and set. Let cool completely on the baking sheet before serving.
Notes
- Store cooled cloud bread in an airtight container in the refrigerator for up to 3 days to maintain its airy texture.
- To gently warm leftover cloud bread, try microwaving it for 10-15 seconds; avoid overheating to prevent it from becoming rubbery.
- Serve your cloud bread with smoked salmon and cream cheese for a delicious and protein-packed open-faced sandwich.
- For extra stable egg whites, ensure your bowl and beaters are scrupulously clean and free of any trace of oil or grease.
