- Cooked Rice (preferably day-old): 4 cups
- Beef Sirloin, thinly sliced: 1 pound
- Soy Sauce: 3 tablespoons
- Eggs: 2 large
- Frozen Mixed Vegetables: 1 cup
- Onion, chopped: 1/2 medium
- Garlic, minced: 2 cloves
- Sesame Oil: 1 tablespoon
Instructions
- Step 1: Marinate the beef: In a bowl, combine the thinly sliced beef with 1 tablespoon of soy sauce. Let it sit for at least 15 minutes.
- Step 2: Scramble the eggs: Lightly beat the eggs and scramble them in a wok or large skillet over medium-high heat. Remove the scrambled eggs from the wok and set aside.
- Step 3: Cook the beef: Add sesame oil to the wok and heat over high heat. Add the marinated beef and stir-fry until browned and cooked through. Remove the beef from the wok and set aside.
- Step 4: Stir-fry the vegetables: Add the chopped onion and minced garlic to the wok and stir-fry until fragrant. Then, add the frozen mixed vegetables and cook until heated through.
- Step 5: Combine everything: Add the cooked rice to the wok with the vegetables. Break up the rice with a spatula and stir-fry until heated through. Add the remaining soy sauce, cooked beef, and scrambled eggs. Stir-fry everything together until well combined and heated through. Serve immediately.
