Ingredients
Scale
- 1 box yellow cake mix
- 3 large eggs
- 1/2 cup vegetable oil
- 1 cup water
- 4 ripe bananas, mashed
- 1/2 cup brown sugar
- 1/4 cup unsalted butter
- 1/4 cup pineapple juice with almond extract (optional)
Instructions
- Step 1: Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- Step 2: In a large mixing bowl, combine the yellow cake mix, eggs, vegetable oil, and water. Mix until smooth and well blended.
- Step 3: Gently fold in the mashed bananas into the batter. Pour the mixture into the prepared baking pan and spread it evenly.
- Step 4: Bake in the preheated oven for about 30-35 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for about 10 minutes.
- Step 5: While the cake is cooling, prepare the sauce by melting the butter in a saucepan over medium heat. Stir in brown sugar and pineapple juice with almond extract (if using), cooking until dissolved and bubbly.
- Step 6: Poke holes all over the top of the cooled cake with a fork or skewer. Pour the warm banana sauce evenly over the cake, letting it soak in. Allow it to sit for at least 30 minutes before serving. Enjoy!
Notes
- For optimal freshness, store the Bananas Foster Poke Cake in an airtight container at room temperature for up to 3 days or refrigerate it for up to a week.
- When reheating, warm individual slices in the microwave for about 10-15 seconds to enjoy the cake's moist texture and gooey sauce without drying it out.
- Serve with a generous scoop of vanilla ice cream or whipped cream on top to balance the rich flavors of the banana sauce and add a delightful creaminess.
- For an extra layer of flavor, consider adding chopped walnuts or pecans to the batter before baking, or sprinkle them on top after pouring the sauce for added crunch.
