Ingredients
- All-purpose flour: 3 cups
- Granulated sugar: 1/2 cup
- Active dry yeast: 2 1/4 teaspoons
- Milk: 1 cup
- Butter: 1/4 cup (melted)
- Eggs: 2 large
- Mashed ripe bananas: 1 cup
- Chopped walnuts: 1/2 cup
- Ground cinnamon: 2 tablespoons
Instructions
- Step 1: In a large bowl, combine 2 cups of flour, sugar, and yeast. Heat milk and butter until warm (120-130°F). Add to dry ingredients. Beat for 2 minutes.
- Step 2: Add eggs and mashed bananas. Gradually add the remaining flour until a soft dough forms.
- Step 3: Turn dough out onto a floured surface and knead for 5-7 minutes, until smooth and elastic. Place in a greased bowl, turning to coat. Cover and let rise in a warm place for 1 hour, or until doubled in size.
- Step 4: Punch down the dough. Roll out into a 12×18 inch rectangle. Sprinkle with cinnamon and chopped walnuts.
- Step 5: Roll up tightly, starting with the long side. Cut into 1-inch slices. Place in a greased baking dish.
- Step 6: Cover and let rise for 30 minutes. Bake at 375°F (190°C) for 20-25 minutes, or until golden brown. Drizzle with your favorite cream cheese frosting while warm.
Notes
- Store leftover rolls in an airtight container at room temperature for up to 2 days, or in the refrigerator for up to 4.
- For a warm, gooey treat, reheat individual rolls in the microwave for 20-30 seconds or cover and warm in a 350°F oven for about 10 minutes.
- These cinnamon rolls are delicious on their own, but a scoop of vanilla ice cream takes them to the next level!
- To enhance the banana flavor, lightly coat the dough with a thin layer of banana puree before sprinkling with cinnamon and nuts.
