  • 1 cup diced pineapple (fresh or canned, drained)
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup packed light brown sugar
  • 1/2 cup (1 stick) cold unsalted butter, cubed

Instructions

  1. Step 1: Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish. In a large bowl, gently toss the sliced bananas, diced pineapple, granulated sugar, and cornstarch until the fruit is evenly coated. Pour this fruit mixture into the prepared baking dish and spread it into an even layer.
  2. Step 2: In a separate medium bowl, whisk together the all-purpose flour, rolled oats, and brown sugar. Add the cold, cubed butter to the dry ingredients.
  3. Step 3: Using your fingertips, a pastry blender, or two knives, cut the butter into the flour mixture until coarse crumbs form. Some larger pea-sized pieces of butter are desirable. Evenly sprinkle this crumble topping over the fruit mixture in the baking dish.
  4. Step 4: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the topping is golden brown and the fruit filling is visibly bubbly around the edges.
  5. Step 5: Carefully remove the crumble from the oven and let it cool on a wire rack for at least 15-20 minutes before serving. This allows the fruit filling to set slightly. Serve warm, optionally with a scoop of vanilla ice cream.
