Ingredients
Scale
- 200g feta cheese
- 4 large eggs
- 2 cups fresh spinach, chopped
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh basil or parsley for garnish (optional)
Instructions
- Step 1: Preheat your oven to 200°C (400°F) and prepare a baking dish by lightly greasing it with olive oil.
- Step 2: In the baking dish, place the block of feta cheese in the center. Surround it with the halved cherry tomatoes and chopped spinach.
- Step 3: Drizzle olive oil over the vegetables and feta, then sprinkle with minced garlic, salt, and pepper to taste.
- Step 4: Create four small wells in the mixture around the feta cheese and gently crack an egg into each well.
- Step 5: Bake in the preheated oven for about 20-25 minutes, or until the eggs are set to your liking and the feta is softened and slightly golden.
- Step 6: Remove from the oven and garnish with fresh basil or parsley if desired. Serve warm with crusty bread or over grains for a complete meal. Enjoy!
Notes
- For optimal freshness, store any leftovers in an airtight container in the refrigerator for up to 3 days.
- When reheating, gently warm the dish in the oven at a low temperature to prevent overcooking the eggs; you can also microwave it briefly, covering it to retain moisture.
- Serve your Baked Feta Eggs with a side of crusty bread or over a bed of grains like quinoa or rice to soak up all the delicious flavors.
- For an extra flavor boost, consider marinating the feta in herbs and spices beforehand or adding a pinch of red pepper flakes for a hint of heat.
