  • 1 cup Shredded carrots
  • 1 cup Shredded red cabbage

  • 1/4 cup Crispy wonton strips
  • 1 large Cucumber
  • 1/4 cup Rice vinegar

Instructions

  1. Step 1: Prepare the Cucumber Water dressing. Peel and roughly chop the cucumber. Place the chopped cucumber and rice vinegar in a blender and blend until smooth. Add a tablespoon of water at a time if needed to achieve desired consistency.
  2. Step 2: Divide the mixed greens evenly among meal prep containers.
  3. Step 3: Top the mixed greens in each container with equal portions of shredded carrots, shredded red cabbage, and shelled edamame.
  4. Step 4: Store the salad containers in the refrigerator.
  5. Step 5: Right before serving, drizzle with the cucumber water dressing (shake well before using) and top with sliced almonds and crispy wonton strips.
