- 1 bag (5 oz) Mixed greens salad
- 1 cup Shredded carrots
- 1 cup Shredded red cabbage
- 1/2 cup Shelled edamame
- 1/2 cup Sliced almonds
- 1/4 cup Crispy wonton strips
- 1 large Cucumber
- 1/4 cup Rice vinegar
Instructions
- Step 1: Prepare the Cucumber Water dressing. Peel and roughly chop the cucumber. Place the chopped cucumber and rice vinegar in a blender and blend until smooth. Add a tablespoon of water at a time if needed to achieve desired consistency.
- Step 2: Divide the mixed greens evenly among meal prep containers.
- Step 3: Top the mixed greens in each container with equal portions of shredded carrots, shredded red cabbage, and shelled edamame.
- Step 4: Store the salad containers in the refrigerator.
- Step 5: Right before serving, drizzle with the cucumber water dressing (shake well before using) and top with sliced almonds and crispy wonton strips.
Notes
- Store the cucumber dressing separately to prevent the salad from getting soggy, and shake well before drizzling.
- This salad is best served chilled, so no reheating is necessary – just grab and go!
- For an extra protein boost, consider adding grilled chicken or shrimp right before serving.
- Don't over-blend the cucumber; a little texture in the dressing is a nice surprise!
