Instructions
- Step 1: Prepare the dates by slicing them lengthwise, being careful not to cut all the way through. Gently open each date like a little boat.
- Step 2: Fill each date with about 1/2 teaspoon of peanut butter. You can use a small spoon or piping bag for this.
- Step 3: Melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth. Add coconut oil to thin if needed.
- Step 4: Dip each peanut butter-filled date into the melted chocolate, ensuring it's fully coated. Use a fork to lift them out and allow excess chocolate to drip off.
- Step 5: Place the chocolate-covered dates on a parchment paper-lined plate or baking sheet. Sprinkle with flaky sea salt and chopped peanuts, if desired.
- Step 6: Refrigerate the dates for at least 30 minutes to allow the chocolate to set completely before serving. Store leftovers in the refrigerator.
